Preheat your toaster oven to 425 degrees
1 7" pita -- Lebanese style bread
1 teaspoon THIS (1 1/2 teaspoons if you like it very spicy)
1 1/2 tablespoons of tomato sauce
2 pinches salt
2 grinds of fresh black pepper
2 ounces of mozzarella thinly sliced or shredded
2 pinches dried oregano
4 or 5 fresh basil leaves
This excellent, thin crusted pizza takes all of 7 minutes to prep! It is a classic
marguerita style with a nice hint of spice. Feel free to use this recipe as a base
and get creative with your favorite toppings like pesto, anchovies, olives, thin
slices of grilled eggplant, pepperoni, etc. Double the recipe and invite someone to
have a quickie with you...
Spread 1 teaspoon of THIS in a very thin layer on the pita bread so it is evenly
coated leaving a quarter inch border. Do the same with the tomato sauce and sprinke
with the salt and freshly ground pepper. Top with the mozzarella and finish off
with the oregano.
Place on rack in middle of oven and bake for 3 minutes. At this point, the cheese
should just begin to bubble and show signs of light, golden brown. Remove with a
spatula or tongs and place on a cutting board. Stack the basil leaves, tear into
small bits and scatter on the pizza. With a pizza wheel or knife, cut the pizza
into eighths and serve at once.
